Chocolate & Banana Cupcakes




This recipe is extremely simple to make, and the finished products taste delicious minutes after coming out of the oven, while they are still warm...

Ingredients:

1-2 eggs
100g natural cane sugar
150g mashed ripe bananas
80g light olive oil
1 tsp vanilla extract
50g all-purpose flour
25g rice flour
25g hazelnuts, ground
7g cocoa powder
1/4 tsp salt
1/4 tsp baking soda
50g chocolate chips

Method:

Whisk together eggs, sugar, mashed banana, oil and vanilla extract in a medium bowl.

In a large bowl, whisk together the flour, hazelnuts, cocoa powder, salt and baking soda. Add the wet ingredients to the dry and whisk until all combined.

Fold in the chocolate chips.

Divide the batter into cupcake cases/molds. (Makes 12)

Bake at 180 C/350 F for 20 minutes.
